Our vision : The Boucherie Grinder uses the animal from the tip of the nose to the fork of the tail – a modern vision of butchery. Charles Bizeul, our master butcher, introduces you to steak art; his framework is a high quality meat worked with refinement. Initiated to “neo-butchery”, the new trend encouraging traceability, he has been trained at Fleisher’s, the New York butcher shop where the movement all started.
