Berkshire pork from Quebec
The Berkshire pork is native from England and is one of oldest pork's breeds in the world. The animal has the peculiarity to be black with its four legs white and also has white spots on the tail and on the snout. It is a rustic breed suited well to the "natural" breeding.
Berkshire is considered since a long time for its superior-quality meat and its remarkable taste. It is indeed very flavourful, which contributes to distinguishing from the regular pork protein who is often too low-fat and with almost no persillage. With this protein, the meat flavour is quite enough to charm gourmets, without any needs for sauce or seasoning.
We have the chance to collaborate with the very first — and only— large breeding of Berkshire pork in the province of Quebec (it is the same group who brought the Wagyu beef). Because of their good cares, the animals are in optimal conditions: living outside in fields, nourished with grass and corn, used to the human presence.
